Making Dosai (as well as Idly) is comparatively a long process because a plenty of time is needed for the fermentation. But what if you are in a hurry and want to make it to the dinner table at 8 o' clock while you're left with just few hours more? Hmm... The answer is, Yes. You can indeed make excellent soft dosai which requires no fermentation.
Ingredients:
1. Clean and rinse Urad dal. Soak it in enough hot water for 30-45 minutes.

Split Black Gram (Urad Dal) - 1 Cup
Roasted White Rice Flour - 1 Cup
All Purpose Flour - 1 Cup
Baking Soda - 1/4 Tsp
Coconut Milk Powder - 4 Tsp (Or 1/2 Cup Freshly Squeezed Coconut Milk)
Salt to taste
Lukewarm water as needed
Olive Oil/Ghee
Method:
1. Clean and rinse Urad dal. Soak it in enough hot water for 30-45 minutes.
2. Drain the excess water and grind to a smooth batter. Transfer it to a large mixing bowl.
3. Add the flours, baking soda, coconut milk and salt with the ground batter. Add water little by little and mix well using a metal whisk. Whisk helps to dissolve any unmixed lumps.
4. Stop adding water, when your batter reaches a consistency that is slightly thicker than pancake mix.
5. Heat a nonstick skillet (tawa) and pour a ladle full of dosa batter. Immediately spread in a circular motion.
6. Smear some ghee/olive oil around and cook on both sides.
7. Tastes good with spicy chutney or chicken curry.
