Chicken Curry (Sri Lankan Style)



Ingredients:

Cleaned and cut Chicken - 1 Kg

Chopped Onions - 1/4 Cup
Chopped Tomatoes - 1/2 Cup
Chopped Green Chilli - to taste
Chilli Powder - 1/2 Tsp
Crushed Pepper Corns - to taste
Turmeric Powder - 1 Tsp
Sri Lankan Roasted Curry Powder - 4 Tbsp
Ginger & Garlic Paste - 1 Tsp
Salt to Taste

To Temper:
Pure Coconut Oil - 2 Tbsp
Mustard Seed - 1/4 Tsp
Fenugreek Seeds - 1/4 Tsp
Fresh Curry Leaves - A Handful
Dried Red Chilli - A Few


Method:

1. Marinate the chicken with chilli powder, turmeric, crushed pepper corns, curry powder and salt. Set aside for 10 minutes.

2. In a pan, heat coconut oil and temper the mentioned.

3. When the mustard seeds start spluttering, add onions and ginger garlic paste. Saute till the onions turn golden brown.

4. To this add the marinated chicken along with tomatoes and green chilli. Mix well.

5. Add 1/2 cup of water, stir and simmer cook until the gravy thickens.

6. Once done check the seasoning. Serve with hot rice or rotis.
