Healthy & Easy Rice Porridge





Ingredients:

Raw Rice/Short Grain Rice (Preferebly Red variety) - 1 Cup

Chopped Carrots - 1/2 Cup
Green Gram/Mung Beans - 1/4 Cup
Crushed Pepper Corns - 1 Tsp
Fenugreek Seeds - 1 Tsp
Crushed Garlic - 5 Cloves
Ginger & Garlic Paste - 1 Tsp
Salt to Taste
Water - 3 Cups
Thick Coconut Milk - 1 Cup

Method:

1. Rinse together rice, green gram and fenugreek seeds in a colander and let the water drain.

2. In a pressure cooker add all the ingredients except coconut milk. (Thin extract of  Coconut milk can be used instead of water).

3. Cover tightly and cook on medium low flame until 3 whistles are reached. Once done wait until the pressure is totally released. 

4. Mash lightly. Add thick coconut milk. Heat again until it starts to boil and then turn off the heat.

5. Check the seasoning and serve.
