Strawberry Cupcakes





Ingredients:

All purpose Flour - 2 Cups
Sugar - 1 1/4 Cups
Strawberry Flavored Jelly - 1 Pack
Softened Butter - 1/2 Cup
Eggs -3
Baking powder - 1 1/2 Tsp
Fresh milk - 1 Cup
Vanilla Essence - 1 Tsp
Fresh Strawberries + 2 Tbsp Sugar - Pureed in blender
Pinch of Salt

Method:

1. Cream together butter, sugar and strawberry jelly powder. Add eggs one at a time and beat until light and fluffy.

2. Sift the flour, salt and baking powder and fold gently into the mixture.

3. Next combine milk and vanilla essence.

4. Finally incorporate the strawberry puree.

5. Pour the batter equally into each cupcake cases and bake at 180C until the toothpick inserted comes out clean.

6. Pipe some cream cheese frosting and serve. You can use sliced fresh strawberries for garnishing.
