Sri Lankan Coconut Pittu



Ingredients:

Freshly Shredded Coconut - 1 Cup
Cooked Rice - 1 Cup
Rice Flour - 3/4 Cup
A Pinch of Salt
Lukewarm Water - Around 1/4 Cup


Method:

1. Blend coconut, rice, rice flour and salt in a food processor.

2. Transfer to a clean dry bowl. Add water little by little and crumble with fingers. (Do not add too much water as adding excess water will make it form a dough so that the crumbly texture will be lost. What we need is to make it look like crumbles/sand)

3. When you are happy with the texture, transfer it to a Pittu Maker and tap once gently on the benchtop. Steam "lid closed" for about 5 minutes.

4. When done carefully push out from the Pittu Maker.

5. Serve hot with spicy chicken/beef/fish curry.
