Chocolate Chip Muffins

These chocolate chip muffins are great to have in the evening with a cup of tea... They are so soft, moist, milky and guess what? they have hidden chocolate surprises too! 

Chocolate chips can be replaced with fine chunks of cooking chocolate. The rest of the ingredients are easy to get from any groceries.


Ingredients:

All Purpose Flour - 1 1/2 Cups
Baking Powder - 2 Tsp 
White Sugar - 1/2 Cup
Butter (Softened) - 5 Tbsp
Vegetable Oil - 1/4 Cup
Vanilla Essence - 1 Tsp
Eggs - 3
Fresh Milk - 1/2 Cup
Semi Sweet Chocolate Chips - 1/2 Cup
A Pinch of Salt

Method:

1. Preheat the oven to 180 C. Keep the muffin tray ready with liners.

2. In a bowl, add butter and sugar. Beat until it turns creamy.

3. Add the essence and oil. Beat again.

4. Next add eggs one at at time and keep beating until everything is combined.

5. Add milk and mix well. Next add the baking powder, salt and flour. Fold gently without any lumps.

6. Lastly add the chips and carefully fold. Take care not to overmix.

7. Divide the batter evenly among the muffin liners. Once done, carefully tap few times on the counter top to remove any air bubbles.

8. Bake for 20 -25 minutes or until a toothpick inserted comes out clean.
