Stir Fried Noodles

Stir fried noodles is just another easy thing to make. It's all about tossing and stirring! I know it's not an uncommon dish; but definitely an all time favorite. 

When typing this post, I recall the good old days at school where the canteen will be a heaven for us lol! There will be an array of yummy snacks and some healthy varieties too. I can still remember the yellow noodles with a boiled egg wrapped together in lunch sheet. Oh wow... I wish I could dedicate this post to the chef of our school canteen... 


Ingredients:

Rice Noodles - 1 Pack
Turmeric Powder - 1 Tsp
Water

Grated Carrot - 1 Cup
Finely Chopped Beans - 1 Cup
Finely Chopped Spring Onions - 1 Cup
Grated Garlic - 4 Cloves
Finely Chopped Onion - 1/2 Cup
Ginger & Garlic Paste - 1 Tsp
Chicken Stock Cube - 1 (Optional)
Lightly Beaten Egg - 1
Salt & Pepper to taste
Tomato Ketchup - to taste (Optional)
Oil - 1 Tbsp

Method:

1. Heat a pan with enough water to cook the noodles. When it starts to boil, add enough salt and turmeric powder. Add the noodles and cook until it is done.

2. Once done, drain the water using a large colander. Rinse in cold water and let it drain too.

3. In a separate wok, heat oil and add the chopped garlic and onions. Saute for a minute and then add the veggies except spring onions.

4. When they are slightly cooked add salt, pepper, ginger & garlic paste and chicken stock cube. Cook for a minute.

5. Add the egg and leave to cook without stirring. After about a minute or so, the egg will be partially cooked. Mix well and scramble the egg.

6. Finally add the cooked noodles  along with spring onion chops and mix gently in away the noodles is well coated.

7. Add ketchup and give a final mix. And.. you're done!

I prepared a chicken curry as the accompaniment. Like I said before you can include a boiled egg or just serve it right away.
