Baked Mini Cheesecake

Baked or unbaked, eitheway you choose to make... Cheesecake tastes so delicious. It is a dessert which consists of a crushed cookie/biscuit crust and a filling of creamed soft fresh cheese, eggs and sugar. 

Freshly baked cheesecake with a drizzle of melted jam is "a match made in the heaven"! Often it is topped with chocolate fudge sauce, fruits, fruit sauce or whipped cream. 

This easy recipe shows how to bake perfect mini cheesecakes. I chose strawberry jam and stewed pineapple chops as my topping.

This recipe makes 12 regular size mini cheesecakes.




Ingredients:

Biscuit Base:
Digestive Biscuits - 90 g
Butter - 25 g

Filling:
Softened Cream Cheese (Kept in room temperature) - 300 g
Sugar - 120 g
Cornstarch - 1 Tsp
Vanilla Essence - 1/2 Tsp
Eggs - 2
Fresh Lime Juice 1 Tbsp

Topping:
Melted Strawberry Jam - 1/2 Cup
Stewed Pineapple Chops as needed

Method:

1. Line your muffin trays with cupcake liners. Preheat the oven to 180C.

2. Crush the biscuits into a fine powder using your hands (or a food processor). Melt the butter and add it into the crumbled biscuits. Mix well until they are well incorporated. It will look like wet sand.

3. Divide the biscuit mix equally among prepared cupcake liners. Using a spoon or your fingers, press it evenly.

4. In a separate bowl, add the softened cream cheese and beat well. Then add all the filling ingredients one by one and beat on low speed until the mixture turns creamy. Make sure not to beat too much.

5. Fill cupcake liners with the creamy mixture. Gently tap few time on the bench top to remove any air pockets trapped in.

6. Bake for about 20 minutes. The cheesecake will be slightly wobbly even after given baking time. It will get firm once cooled. Make sure not to over-bake or brown them.

7. Baked cheesecakes tend to sink slightly in the middle which is completely normal. Refrigerate for at least 2 hours before serving.

8. Drizzle melted jam and top with stewed pineapple chops. Here's heaven on a plate, Enjoy!

Notes:

* You can replace digestive biscuits with ginger nut biscuits /milk short bread cookies.

* Try to use the best quality cream cheese as it enhances taste.
