Tropical Fruit Tart







Ingredients:

Base:
Cold Unsalted Butter - 100g
Castor Sugar - 3 Tbsp
Egg (Lightly Beaten) - 1
All Purpose Flour 1 1/2 Cups
Pinch of Salt

Custard Filling:
Fresh Milk - 2 Cups
Castor Sugar - 1/2 Cup
Cornflour - 1/4 Cup
Egg Yolks - 2
Butter - 1 Tbsp
Heavy Cream - 1 Cup (Whipped to Stiff Peaks)

Topping:
Strawberries. Kiwis, Mangoes, Dried Apricots (Or any other fruits of your choice) - Sliced
Orange Glaze (Optional)


Method:


1. Prepare the Base: 
 Grate the cold butter. Incorporate sugar, beaten egg, flour and salt with butter. Mix with a  spatula till it forms a soft dough. Cover with plastic wrap and refrigerate for 30  minutes.

2. Prepare the Custard:
Heat the milk. Once it reaches the boiling point remove from the heat and mix the sugar. In a separate bowl combine egg yolks and cornflour. Slowly add the milk to the cornflour mixture while stirring continuously. Return to heat and cook the custard until it thickens slightly. Add butter and let it cool completely. Once cooled completely fold in the whipped cream. Pour the custard in to a plastic container, cover closely with clingfilm and refrigerate.

3. Take out the dough. Flatten it evenly on tart pan. Prick few areas with a fork. Cover and refrigerate again for 15 minutes.

4. Preheat the oven at 200C. Bake the tart crust until it turns golden brown and firm to touch. Let that cool completely.

5. Now spread a generous amount of custard on cooled tart crust evenly. 

6. Arrange the sliced fruits as desired.

7. Brush with orange glaze. Chill and serve.
