Gulab Jamun




Ingredients:

For Jamuns:
Full Cream Milk Powder - 1/2 Cup
Fresh Milk - 1/4 Cup
All Purpose Flour - 4 Tbsp
A Pinch of Baking Soda
Butter - 2 Tbsp

For Sugar Syrup:
Water - 1 Cup
Castor Sugar - 1 1/2 Cups
Crushed Cardamom - A Few
Rose Syrup - 1 Tbsp

Coarsely ground Pistachios & Almonds for garnishing

Method:

1. Melt the butter. Add all the jamun ingredients with melted butter (except fresh milk) and mix well. Now add milk spoon by spoon to form a dough. Make sure the dough is kneaded well for about 10 minutes.

2. Prepare the sugar syrup. Dissolve sugar in the water and bring to boil. Add rose syrup and cardamom pods. Allow to simmer for few minutes and turn off the heat.

3. Now make small lime-sized balls out of the dough. Try to make crack-free balls. 

4. Deep fry them on a pan of oil heated on medium high. The heat should be paid much attention as too much or too little heat can ruin the whole process of making gulab jamuns.

5. Once the jamuns turn golden brown, drain the oil and place them on paper towel.

6. After few minutes of resting, add them into the warm sugar syrup. Let this stand for about 5-6 hours/overnight so that the syrup is well absorbed by the jamuns.

7. Chill and serve with some crushed nuts on top,
