String Hoppers



Ingredients:

Roasted Rice Flour (Red/White) - 2 Cups
A pinch of salt
Boiling water as needed

(Makes 15-20 String hoppers)


Method:

1. In a clean dry mixing bowl, sift the flour and add salt. Use a wooden spoon to mix.

2. Now keep some water to boil. Meanwhile arrange the string hopper wicker mats/banana leaves. Keep the string hopper maker and the steamer (with some water) ready.

3. Once the water reaches boiling point pour it onto a jug and wait for a minute or two, for the intense steam to go away. (Do not pour the boiling water directly into the flour as it will make the dough very stiff, sticky and difficult to squeeze)

4. After a while, pour water little by little and knead the dough with your wooden spoon. As you add water, keep kneading until the dough becomes soft and less tacky to touch.

5. Spoon some dough into the string hopper maker and squeeze onto the mats/ banana leaves in a circular motion making sure you have achieved an even layer.

6. Now place them into the steamer and steam for about 8-10 minutes or until they are done.

7. Remove as soon as the string hoppers are done. 

Sri Lankan Dal Curry and Pol Sambol are the ideal accompaniment for these lovely string hoppers!
