Horse gram (known as "Kollu" in tamil) has excellent health benefits. It is rich in B-complex vitamin and protein. It is quite delicious to taste and at the same time highly nutritious. People who suffer from obesity or trying to loose weight can try this soup on daily basis. It tones up the digestive system and prevents acidity and flatulence.
Ingredients:
Horsegram - 2 Tbsp
Pepper Corns - 1 Tsp
Cumin Seeds - 1/2 Tsp
Fennel Seeds - 1/2 Tsp
Garlic - 2 Cloves
Shallots (small onions) - 2
Curry Leaves - 1 Sprig
Chopped Tomato - 1
Salt to taste
Olive Oil - 2 Tsp (Optional)
Water - 3 Cups
Method:
1. Rinse horsegram in a tea strainer and drain the water.
2. In the blender add horsegram, pepper corns, cumin & fennel seeds, garlic, shallots and curry leaves with 1 cup of water. Pulse until they are coarsely ground.
3. Pour it into a saucepan adding 2 more cups of water and chopped tomatoes. (Add olive oil if preferred).
4. Simmer gently for about 20-25 minutes or until the soup is reduced to 1 cup in total.
5. Using a colander, strain the soup. Add enough salt and now it's ready to have go!
