Instant Rava (Semolina) Idly


Ingredients:

Fine Semolina (Rava) - 3 Cups
Yoghurt - 1 Cup
ENO Fruit Salt - 1 Tbsp
Water - as needed
Salt to taste

For tempering:
Finely Chopped Ginger - 1/2 Tsp
Finely Chopped Curry Leaves - few sprigs
Mustard Seeds - 1/2 Tsp
Cumin Seeds - 1/2 Tsp
Oil - 2 Tsp
-------------------------------------------
Roasted Cashew Nuts (Optional)

Method:

1. Temper the second set of ingredients in oil and set aside.

2. Keep the idly pot ready and grease the molds with oil. (For garnishing you can place one roasted cashew nut on each mold)

3. In a large bowl mix semolina and yoghurt together with enough salt. If the batter is too thick keep adding water spoon by spoon and mix until it reaches a consistency that is neither too thick nor too thin.

4. Add your tempered spices. Lastly add ENO Fruit salt and mix. At this point you may notice the batter starting to bubble slightly.

5. Immediately pour a ladle full of batter on each mold and steam until they are done. (Make sure the water reaches the boiling point when idly molds are placed in)

6. Serve hot with coconut chutney and/or sambhar.
