Fried Fish in Homemade Fish Sauce

Ingredients:

Whole Fish (I used "Grouper") - 1
Ginger & Garlic Paste - 3 Tsp
Chilli Powder - 2 Tsp
Turmeric Powder - 1 Tsp
Lemon / Lime Juice - 1/2 Cup
Salt to taste
Oil for frying

Finely Chopped Onions - 1 Cup
Finely Chopped Tomatoes - 2 (Medium Sized)
Fresh Orange Juice - 1 Tbsp
Tomato Paste - 1 Tbsp
Tomato Ketchup - 2 Tbsp
Sweet Soy Sauce - 1 Tbsp
Freshly Ground Pepper - to taste
Crushed Dried Herbs (Oregano, Basil & Marjoram) - 2 Tsp
Sugar - 1/2 Tsp (Optional)
Salt to taste
Water as needed


Method:

1. Clean the fish and put few gashes on either sides. Mix first set of ingredients (except Oil) and prepare the marination. Marinate the fish well and set aside.

2. After about an hour, fry the fish until it is done and place on paper towel. Reserve the remaining marination.

3. Blend the chopped tomato and make a puree. In a separate pan, heat a tablespoon of oil and add chopped onions. Saute till golden brown.

4. Next add the tomato puree along with the rest of the ingredients mentioned in the second set. Add the remaining marination too. Mix well and simmer gently for about 10 minutes or until the sauce has reached desired thickness.

5. Adjust the seasoning and remove from heat.

6. Place the fried fish on youserving platter and pour the sauce over it. Serve hot.
